Coconut Milk Berry Smoothie

As a kid, I always assumed that I hated coconut, because both my parents hated coconut. They told me it was gross, and for a long time, I believed them without trying it for myself. Funnily enough, once I did, I found out that it wasn’t that bad at all. Sure, it’s not the best food in the world, but I didn’t find the flavor as offensive as my parents did.

When I found out I didn’t hate the coconut taste, a whole new world of ingredients was opened to me. One of them, unsurprisingly, was coconut milk. This smoothie doesn’t really taste like coconut, but there are lots of health benefits associated with it. Coconut milk is full of nutrients–especially vitamin B–and is full of protein and calcium. In addition, it’s lactose free, which makes it perfect for those who can’t drink dairy milk.

Now that I’m done advertising coconut milk as an ingredient, I’ll go on to advertising this smoothie as a whole. It’s creamy, sweet and cold, and is full of protein, calcium and antioxidants. On top of that, it’s super filling and perfect for breakfast or  a snack.

This smoothie is healthy and really pretty, and I liked it enough to drink an entire mason jar full (which in retrospect maybe was not the best idea I’ve ever had, but what’s done is done). Enjoy!

Ingredients

  • 1 can coconut milk (13.5 fluid ounces)
  • ¼ cup plain greek yogurt OR ½ a ripe banana
  • 1 cup frozen berries
  • 1 teaspoon honey
  • about ¼ cup ice

Instructions

Blend the coconut milk, the yogurt (or banana), the honey and the berries together until smooth, then add in as much ice as you want. I used about ¼ cup, because I wanted a thick and cold smoothie. Totally up to you.

This serves 2 people (if you’re prepared to drink a reasonable amount of smoothie) and can be kept up to 2 days in the fridge.
