Sometimes, it’s seen as an accomplishment when a salad or other dish is as complicated as possible. Sometimes, that’s impressive and nice to have. But I find that on most occasions, a simple dish saves time and is just as satisfying as a complicated one.
This salad comprises lettuce, strawberries and pistachios, and a light drizzle of a balsamic vinegar based dressing. Though it has only a few ingredients, each bite has a slightly different balance of flavors, making it an interesting and refreshing dish for summer.
It’s been hard for me to remember to eat healthy now that I’m back from Europe, where we ate cake every day, but eating things like salads for lunch is slowly pulling me back to how I usually eat. All the walking and all the stairs in Europe did offset eating cake after every meal, but I don’t walk anywhere as much back at home, and I need to start adjusting my diet to reflect that. This salad does the job particularly well, because the pistachios make it filling and salty without making it unhealthy, like tons of croutons would.
I really love coming up with healthy things to eat, even when I would rather be feasting on desserts, so I hope you guys try this recipe and let me know how it goes!
- ½ head romaine lettuce
- 5-7 strawberries, sliced
- ¼ cup pistachios, shelled
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon honey
- 1 teaspoon lemon juice
In a small bowl, whisk up the oil, balsamic vinegar, honey and lemon juice until the mixture is homogeneous.
Roughly chop the lettuce and arrange the strawberries and pistachios on top, then drizzle the balsamic dressing on top and serve.
