Rainbow Sprinkle Cookies

Confession time: the song, “Rainbow Connection” from the Muppet Movie has been stuck in my head ever since I saw it for the first time after a tonsillectomy at age four. I mean, not always stuck in my head, but if someone says the word rainbow…

However awesome rainbows themselves might be, these rainbow sugar cookies are better. Soft, chewy cookies with almond, a hint of honey and a mosaic of rainbow sprinkles? How much better can you get?

About this much better. I finally got a cookie scoop and I love it, because I no longer have to chill my dough so I can roll it with my hands. Yay!

I finally know why there are so many songs about rainbows: they’re awesome, especially in edible form. Try them out and tell me how you like them!

Ingredients

  • ½ cup melted butter
  • 1 cup granulated sugar
  • 1 egg
  • ½ teaspoon almond extract
  • 1 teaspoon honey
  • ½ teaspoon baking soda
  • 1 ¼ cups flour
  • ⅓ cup rainbow sprinkles

Instructions

Preheat the oven to 375º F.

In a medium bowl, combine the butter and sugar together.

Add in the egg, the almond extract and the honey, and stir until combined.

Mix in the baking soda, then the flour and sprinkles. Stir until the dough comes together; it should be wet but slightly sticky.

Scoop the dough into 1 tablespoon balls and place on a lined or greased baking sheet at least one inch apart.

Bake for 6-8 minutes, or until golden brown. Let cool for 5 minutes on the baking sheet before transferring to a wire rack to finish cooling.
