Easy Food Processor Snack Balls

I finally finished school, but I don’t know if I can comfortably call this summer. It doesn’t feel like summer–it’s cold and I’m actually being productive. But one thing does make it seem a lot like what I remember from the past 12 years of school: snacking.

When you’re at home, it’s so much easier to snack. And if you’re trying to stay healthy, what are you supposed to do? Just stay out of the kitchen? The answer is no: that’s impossible. You gotta make healthy, filling and above all, EASY snacks.

I have a love-hate relationship with mixing things. I love mixing by hand, but I hate hand mixers, but I love using my stand mixer. At some point, though, you have to let the food processor get its turn. So many hipster SoCal bloggers (aka my idols) either make or buy snack balls like this, and I was like, “I can do this, we have a food processor.”

It’s so easy and so delicious! Today I have two recipes, one with peanut butter and one with chocolate. Both are amazing and take just over 30 minutes from start to snacking. Happy summer-ish!

Peanut Butter Bombs

Ingredients

  • ½ cup unsweetened peanut butter
  • 2 teaspoons coconut sugar
  • ¼ cup oat flour
  • 2 tablespoons coconut oil

Instructions

Put all the ingredients in the food processor and pulse until the mixture is even–it’ll be kind of sticky, but if it’s liquidy, add more oat flour 2 teaspoons at a time.

Roll the dough into balls and refrigerate for 30 minutes before serving. Keep refrigerated.

 

Date Fudge Balls

Ingredients

  • 10 pitted dates (I used deglet)
  • ⅓ cup raw walnuts
  • 3 tablespoons coconut flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil

Instructions

Fill a bowl with warm water and let the dates soak for 5-10 minutes.

In a food processor, add your dates, walnuts, flour, cocoa and coconut oil and pulse until the nuts are completely pulverized–you don’t want huge chunks–and the mixture is easy to roll.

Roll the dough into balls and refrigerate for 30 minutes before serving. Keep refrigerated.
